Chicken Tacos

     Hello again,  This was another recipe that everyone enjoyed.  So it gets a smiley face too, yay! 
     This taco could also be used for a burrito.  It had black beans, rice, lettuce, cheese and tomatoes. I made a few changes to this recipe; I added the cheese in with the chicken while cooking and let it melt.  Instead of only adding 3 tablespoons of taco seasoning I added the whole pouch, which I think brought out more of the taco flavor. Thanks for reading, God bless.

Last Night: Chicken Parmesan

     Hello everyone.  This Chicken Parmesan dinner was quick and easy.  It also got a smiley face to go in the book.  I took chicken breasts and cut them in half for portion size pieces.  I took an egg and beat it slightly like it said in the recipe and coated it with bread crumbs.  Fried it in the pan on both sides for 3 minutes per side then placed it in the oven topped with sauce and cheese, boiled pasta and that was pretty much it.  Thanks for reading, God bless.

Stuffed Tomatoes

Hello everyone.  Who it sure has been a busy and full of blessings week.  My son and one of my nieces were baptized today.  What a great start to the week to come.
     Ok so Thursday night we had Stuffed Tomatoes, it wasn't a big hit with the kids.  As for my husband and I think it was good maybe add a little more seasonings.  My daughter did like to help scoop the tomato guts out.  We saved those, but they didn't last too long.  My son ate them with his dinner...lol.  I placed the tomatoes in a muffin pan to cook.  They held their shape very well.
     Last night I made a Turkey swiss patty melt.  It was good, everyone agreed that it would get a smiley face.  I don't have a picture for this, but we agreed that it needed mushrooms.

My Very First Fondant Cake

Hello everyone.  The other day I made fondant, and was happy the way it turned out.  I never imagine that my cake would turn out so pretty.  Just the first one in a list of cakes to come.  I am practicing so my daughters 13th birthday cake will be just like the picture I have in my head.  So the next time I go to the store I am going to have to pick up some rice cereal so I can start practicing modeling things out of it, then putting fondant around that too.  I have faith and patience.  I love trying and learning new things.  Alright, here it is the first fondant topped cake.  It is a chocolate butter cake layered with the filling of chocolate and fresh strawberries.  I dirty iced the cake in a butter cream vanilla.  Yummy and was a hit at church last night.  Thanks for reading, God Bless.

Crispy Oven Fried Chicken and Fondant

Hello again we are almost all caught up now.  Tonight's dinner was the crispy oven fried chicken, another smiley face in the composition book.  While that was in the oven I decided to try my hand at making fondant for the first time ever and I must say with my husband and daughter's help handing me things while my hands were deep in fondant kneading.  I did it and I can't wait to roll it out and use it.  This fondant recipe I used came from allrecipes and it tastes like divinity without the nuts.  Thanks again for reading, God bless.

Creamy Fettuccine Carbonara

Hello again, this dish I fixed yesterday afternoon.  My husband and daughter didn't like the baby spinach leaves in it and suggested broccoli instead, however my son and I like it with the leaves.  Once my son new what the leaves were he ate them lol.  If you would like the recipe just comment and I will send it your way.  Thanks for reading, God bless.

Enchilada Casser-role

Hello everyone.  A Belated Happy New Year to all!  Ok so Saturday night for dinner I tried an enchilada casser-ole.  It was a hit with the family.  I did leave out lettuce and tomatoes only because I had forgotten to get the tomatoes for this dish...lol.  I'm not sure where I got this recipe but if you are interested leave a comment and I will give you the recipe.  Thanks for reading.  God bless.
